Something we would like to share with you about tea:
Most types of tea that we drink are made from Camellia sinensis, a warm-weather plant. Fresh tea leaves are sun- or air-dried after being picked and fermented. The fermentation process of the tea leaves dictates the oxidation level, and hence the types of tea we have, such as green tea, oolong tea, red tea, and black tea. Green tea is not oxidated at all, Oolong tea is allowed minor oxidation, red tea is allowed more oxidation while black tea is allowed to oxidize fully. After the oxidation process, or fermentation, the tea leaves are dried through roasting to remove any remaining moisture to preserve their shapes and flavors.
Specific steps in the tea brewing process determine the taste of the tea. The amount oftea leaves (either bagged or loose) and the time that it is steeped for in hot water (85 to 100 degress Celsius) changes the tea flavor anywhere from watery, to very flavorful, to bitter. Without the correct brewing method, a cup of expensive tea can turn into a cup of bitter water. Please view the video clips on the right for demonstration.
